Avocado Toast
The best avo recipe in the game...
It's obvious at this point avocado toast has hit trendy brunch spots by storm over the last two years. But why pay $12 to $16 for a gourmet (and yes, delicious) avocado toast when you can make FOUR at home for that price!

Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 1 person
Ingredients
- 1 medium-sized organic avocado
- 1 medium slice Tuscan Bread
- 1 large organic free-range egg
- 1 tbsp avocado oil
- 1 tsp pink himalayan salt
- 1 tsp black ground pepper
- 1/8 cup cherry tomatoes
- 1/8 cup scallions
- 2 tbsp feta cheese
- 1 oz smoked lox
- 1 tbsp organic tahini
Instructions
- Toast the slice of Tuscan bread for about 6 minutes
- Mash whole avocado on separate plate
- Cut tomatoes into halves
- Heat oil in a small pan
- Crack the egg and let fry for 2.5 to 3 minutes (watch closely to make sure the yolk doesn't get too cooked!)
- Coat slice of Tuscan bread with tahini (to moisten)
- Place smashed avocado on top of tahini spread
- Add halved tomatoes on top of avocado smash
- Roll two strips of smoked lox and place on top of tomatoes
- Place fried egg on top of smoked lox
- Sprinkle salt, pepper, scallions, and feta all over
Alternative recipe is everything minus the lox for those anti-fish people ;)
